Dr. Achyut Adhikari’s research group in the School of Nutrition and Food Sciences at LSU AgCenter is involved in conducting basic and applied research focusing on microbiological safety of fresh produce, treenuts and specialty crops. More specifically, the group is investigating prevalence and persistence of various food borne pathogens during pre- and post-harvest processing steps and developing innovative strategies to mitigate the food safety risk. On-farm food safety risk associated with contaminated irrigation water, biological soil amendments, use of natural antimicrobials, and the reduction of post-harvest microbial contamination using novel physical and chemical intervention strategies are the topics that are currently under investigation. The group is also actively involved in conducting several extension and outreach programs targeting the food safety educational and training needs of growers, food processors, suppliers, vendors, regulatory personnel, and consumers in the state of Louisiana and the Gulf Coast Region. Empowering all the stakeholders in the food chain to comply with Food Safety Modernization Act (FSMA) regulations is one of the focus of our extension activities.
