Farmer Feature: Cryer's Family Produce

The Cryer family has been growing and selling produce in the Northshore community for over 100 years. Today you can find them at several farmers markets across the Southeast region of the state, including the St. Helena Farmers Market in Greensburg, LA. Meet owners Aulton Cryer Junior and Senior, and their farm manager Angella Dyer.


Mr. Cryer's Okra, Corn & Tomatoes

When he's not farming, Aulton Cryer Jr is a chef. So, it's no surprise that his recipe for smothered okra, corn and tomatoes is packed with flavor and fresh produce from his family's farm. This dish pairs perfectly with baked catfish filets. Give this recipe a try for a taste of Southeast Louisiana!

  • 1 tsp olive or canola oil
  • 1 cup trinity mix (bell peppers, onion, and celery)
  • 2 cups okra, sliced
  • 1 cup sweet corn (about 2 ears)
  • 2 cups tomato, chopped
  • 1/2 tsp low sodium Creole seasoning
  • 1/2 tsp garlic powder
  • 1/2 cup diced turkey ham (optional)
  1. Heat a large skillet over medium-high heat. Add oil to skillet, swirling to coat.
  2. Add turkey ham (if included) and trinity mix. Sauté until onions are clear, about 5 minutes.
  3. Add okra, tomato, corn, Creole seasoning, and garlic powder. Reduce heat to medium-low.
  4. Cover and simmer for 10 to 12 minutes, stirring occasionally.

Fresh Corn Salsa

This fresh corn salsa is the perfect summer side dish! It's colorful, flavorful, and packed with nutrients. Serve it as a dip with whole grain tortilla chips or use it as a topping for taco Tuesday.

  • 3 Tbsp olive or canola oil
  • 2 Tbsp lime juice (about 1 lime)
  • 1/4 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 cup red onion, diced (about 1/2 an onion)
  • 1 garlic clove, minced
  • 3 cups fresh sweet corn (about 6 ears)
  • 1/2 cup bell pepper, diced (about 1/2 bell pepper)
  • 1/2 cup tomatoes, diced (about 1/2 large tomato)
  • 1/4 cup fresh cilantro, chopped
  1. Mix the oil, lime juice, cumin and salt. Stir in red onion and garlic and set aside.
  2. Combine the bell pepper, tomatoes, and corn in a bowl. Add the dressing mixture to the bowl. Add cilantro if desired and toss well.
