Heart Health is a concern of many people. When it comes to eating healthy, looking at the types of fat in our diet is a key issue. We all know that “fat is flavor” and we need some fat in our diet. It’s important to choose healthy fats – less saturated fat (solid at room temperature) and more monounsaturated fats (liquid at room temperature, derived from plant sources) with those Omega 3 fatty acids. We recently did a fun cooking demonstration at the Alexandria Farmer’s market using lean beef, lots of veggies, and Extra Virgin Olive Oil – a healthy fat. Farmer’s Market Steak & Veggie Fajita Skillet

Marinade:
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Lime Juice
½ teaspoon chili powder
½ teaspoon cumin
½ teaspoon red pepper flakes
¼ teaspoon black pepper
½ teaspoon salt
1 clove garlic, minced
1 Tablespoon Extra Virgin Olive Oil
1 ½ pounds flank steak, thinly sliced across the grain
1 large onion, sliced
1 red bell pepper, sliced/julienne style
1 green bell pepper, sliced/julienne style
Serve hot and enjoy!
