The LSU AgCenter Rapides Parish Extension Nutrition Team kicked off the Spring 2019 Lunch & Learn series on Wednesday, January 16. The topic was “Live Healthy, Live Longer!” The speakers were Eunice Lee, Dietetic Intern from Louisiana Tech University and Ms. Tameka Gold. Tameka shared the very inspiring and motivating story of her struggles with health and fitness. She talked about how she has managed to transform her life and greatly improve her health over the past two years by eating healthy and being active. Ms. Gold did not use any type of fad diets, or “magic pills” to accomplish this amazing transformation. “Find something that works for you and be consistent” was the key message. Eunice Lee talked about the different types of fad diets that are currently popular and why they are not successful for long term health and wellness.

The Lunch & Learn Series will continue monthly through the Spring 2019:

Chicken Creole Recipe from the Lunch and Learn Series

Ingredients:

4 to 6 chicken breasts, cut into inch size pieces
½ pound turkey sausage
¼ cup oil
1 medium onion, chopped
1 green pepper, chopped
1 cup celery, chopped
1 (14.5 ounce) can petite diced tomatoes, undrained
1 cup chicken broth
1 (6 ounce) can tomato paste
¼ teaspoon pepper
½ teaspoon salt
½ teaspoon each dried basil, oregano, thyme, marjoram, and minced garlic2 cups rice, cooked according to package directions


Method:

  • Sauté chicken pieces in oil, until no longer pink. Remove and keep warm.
  • In the same skillet, sauté onions, green pepper, and celery with the remaining oil until tender.
  • Stir in tomatoes, broth, tomato paste and seasonings.
  • Bring to a boil, reduce heat; cover and simmer for 5 minutes.
  • Return chicken to pan; heat through.
  • Serve over hot rice.
