It’s tailgating time! All over the south and especially here in Louisiana, we have tailgate parties going on every weekend. With our Louisiana temperatures sometimes staying on the warm side, we need to be extra diligent in making sure we follow proper food safety protocol. Ingredients:
1 (8-ounce package) Neufchatel Cheese
aka “Light Cream Cheese”, softened
½ cup light ranch dressing
½ cup hot sauce or your favorite hot wing sauce
½ cup sharp cheddar, shredded
½ cup part-skim mozzarella, shredded
1 ½ cups cooked chicken, shredded
Veggies for Dipping: Celery, Carrots, Zucchini, & Squash are great!
Method:
1. Preheat the oven to 350 degrees
2. Grease 8X8 square baking dish.
3. In a bowl, combine Neufchatel Cheese, ranch dressing, & hot sauce – mix well (an electric hand-mixer works great for this!).
4. Stir in cheeses and chicken – mix thoroughly. 5. Transfer into prepared baking dish and bake for 20 minutes or until the chicken mixture is hot and bubbling.
6. Stir before serving.
This dish can be prepared ahead of time and refrigerated for up to two days before baking.
