Parish Rice / Cahokia Rice is a higher protein, lower glycemic index rice

The Office of Intellectual Property worked with Cahokia Rice in Illinois to grow a rice that has a low glycemic index and is higher in protein than most other rices. The rice is also grown as Parish Rice in Eunice, Louisiana. The LSU AgCenter Office of Intellectual Property facilitates the commercialization and economic development of AgCenter research through evaluation, protection, and licensing of its intellectual property for the benefit of the people of Louisiana.
