Serves 2.
1 large sweet potato, peeled and finely diced
1 green bell pepper, diced
½ small onion, chopped
1 Tbsp + 1 tsp cooking oil
2 tsp low-sodium taco seasoning
Heat oil in a pan over medium-high heat.
Add sweet potato and cook until softened, about 7 minutes.
Add bell pepper and cook another 2 minutes.
Add taco seasoning and onion, mix well, and cook another 5 minutes, or until vegetables are soft and slightly browned.
Top with a fried egg if desired.
