Farmer’s Market Fun in February:

National Soup Day was Tuesday, February 4, 2020 which also happened to be the day for the LSU AgCenter’s monthly food demonstration. We used fresh pork, carrots, and kale from the Alexandria Farmer’s Market. It was a huge hit with the market vendors and patrons! This is a slow cooker recipe that is great for a cool day, or a day when you want to crank down your air conditioner and enjoy some comfort food. Enjoy!

Slow Cooker Pork Soup

Ingredients:

  • 1.5 lb. uncooked pork cut into bite sized cubes
  • 1 tablespoon butter
  • 1 yellow onion diced
  • 4 red potatoes cut into quarters
  • 1 cup baby carrots halved
  • 2 celery stalks diced
  • 10.5 oz low sodium fat free cream of chicken soup
  • ½ cup skim milk
  • ½ cup light sour cream
  • 1 oz packet dry ranch dressing seasoning mix
  • salt/pepper to taste
  • 1 cup of chopped kale

Method:

  1. Melt butter on bottom of crockpot.
  2. Add all of the vegetables on top and stir to coat with butter.
  3. Salt/pepper diced pork, as desired and add to the crockpot.
  4. Mix together the soup mix, milk, sour cream, and ranch dressing mix. Temper the mixture by heating it for 30 seconds in the microwave.
  5. Pour mixture on top of pork.
  6. Cover crock pot and cook on low for approximately 6-8 hours, or until the potatoes are soft and the pork is cooked through. Low and slow is best with milk and dairy products.
