Granola Cups

Ingredients:

1 cup Oats

½ cup All-Purpose Flour

2 Tablespoons Brown Sugar

½ teaspoon Baking Soda

¼ cup Cranberries, dried

½ cup Almonds, sliced

2 Tablespoons Honey

2 Tablespoons Vegetable oil

3 Tablespoons Applesauce

½ teaspoon Vanilla

Directions:

Preheat the oven to 325 degrees F. Spray 12 cup muffin tin with cooking spray. In a large bowl, combine oats, flour, brown sugar, and baking soda. Mix well. Add cranberries and almonds. Mix well. Add honey, oil, applesauce, and vanilla. Mix well. Place 2 tablespoons of mixture in each muffin cup (do not pack). Bake for 12 minutes. Remove from the oven and gently press the mixture down with a spoon making a cup shape. Bake for 2 minutes. Let cool. Option: fill granola cups with yogurt and fruit.
