Work Location: LSU AgCenter FOODii, Baton Rouge, LA
Position Description: This position assists with the operation of the LSU AgCenter FOODii Plant Operations and ensures that tenant companies are competent in good manufacturing practices and equipment usage.
Specific duties include, but are not limited to the following: oversee and coordinate usage of incubator and pilot plant facilities by tenants and AgCenter faculty; design, implement and execute culinary safety and sanitation curriculum ;instruct tenants on how to properly and safely use the kitchen equipment; provide tenants, graduate students and undergraduate workers with guidance and assistance in processing techniques; provide guidance and compliance with safe food handling methods within incubator use policies and procedures including kitchen and pilot plant; provide one-on-one and group technical and problem solving assistance to program participants; develop and maintain key performance metrics to report monthly; develop and maintain food industry relationships and resources; provide specifications, bid procurement and supplier information; interface with University units regarding implementation of research and processing protocols for experiments, product development, processing studies and teaching exercises; Creating Cooking Classes, seminars and workshops and coordinating with the FOODii Director.
Scheduling calendar for rental and parking passes for Gourrier Lane Facility, Ingram Hall, ASFL kitchen and dairy.Collecting rental fees, working with student workers on invoicing.Researching equipment pricing for new FOODii warehouse renovation.
Other duties include: managing inventory of kitchen and cleaning supplies; adhering to all city, state and federal requirements for commercial kitchen facilities; other duties as may occasionally be required for the success of FOODii.
Qualification Requirements: BS or MS degree in Food Sciences or related field. Three to five years’ experience in food processing, retail food business, and food research is preferred. Willing to become HACCP Certified, Better Processing or other Food Safety Certification/Training. Knowledge of food processing, preservation, and packaging.
