Dr. Amogh Ambardekar serves as Director of the LSU AgCenter Food Innovation Institute. His work focuses on helping food entrepreneurs, faculty collaborators, and industry partners develop practical, scalable food products that connect Louisiana agricultural resources with market opportunities.

Dr. Ambardekar brings extensive industry experience in food product development, ingredient functionality, process development, commercialization, and scale-up. He has worked across several areas of the food sector, including rice, pet food, protein-ingredient systems, nutrition bars, plant-based foods, and quick-service restaurant innovation. His previous roles included work with organizations such as Mars, Nestlé Purina, Burger King Europe, Beyond Meat, Glanbia, and ICL-Group.

At FOODii, he is focused on building a stronger bridge between food science, entrepreneurship, and industry application. His interests include value-added agricultural products, functional ingredients, pilot-scale processing, fermentation, plant-based and alternative protein applications, sensory-informed product development, and practical pathways for moving ideas from concept to commercialization.
