Research within the LSU AgCenter’s Food Science Department spans the farm gate to the dinner plate. An important focus of the work in the department is food for health. Scientists are finding ways to reduce sodium, fat and cholesterol and increase fiber in foods that people already like to eat. Food preservation and safety also are concerns of researchers. The department trains future food scientists through its undergraduate and graduate programs.
