(Video, 1:58) The Audubon Sugar Institute (ASI) has been responsible for helping Louisiana’s sugar industry remain profitable for more than 100 years. Faculty conducts research in labs and at sugar factories. Scientists also are looking at ways of converting fibrous residue from sugarcane to ethanol and other specialty chemicals. The department helps train students in biological and agricultural engineering, chemical engineering and food science.
