Spice, Sugar and Science: Unwrapping the Magic of Holiday Cookies theme for the next Unlocking the Secrets of Food Sciences

(11/10/25) BATON ROUGE, La. — The LSU AgCenter Food Innovation Institute (FOODii) and the School of Nutrition and Food Sciences plan to continue the food demonstration series Unlocking the Secrets of Food Sciences to delve into food science with a culinary twist.

The next series session will focus on holiday cookies. It will be held Friday, Dec. 12, from 5 p.m. to 8:30 p.m. in the test kitchen at the Animal and Food Sciences Laboratory Building on the LSU campus at 39 Forestry Ln.

Participants will have an opportunity to learn how some of the science behind gingerbread cookies blends chemistry of flavors, aroma and texture.

“For this workshop, we’ll be exploring the science of cookie making and decorating when making holiday treats,” said Ashley Gutierrez, assistant director of FOODii.

The event will include:

  • Expert insight: Discussion on the science of cookie making and decorating.
  • Artistry in icing: Participants will be using royal icing to transform gingerbread cookies into edible canvases, allowing for intricate designs, vibrant colors and layered textures.

Space is limited, and registration is required. The cost to attend is $60, and each participant will leave with a box of delicious holiday treats.

Registration is available for children ages 10 and older, but they must be accompanied by an adult (18 or older) for an additional $10.
