(05/20/25) BATON ROUGE, La. — The LSU AgCenter Food Innovation Institute (FOODii) and the School of Nutrition and Food Sciences continue the food demonstration series Unlocking the Secrets of Food Sciences to delve into food science with a culinary twist.
The next session will focus on ice cream cake, and will be Friday, June 27, from 5:00 to 8:30 p.m. in the test kitchen at the Animal and Food Sciences Laboratory Building on the LSU campus at 39 Forestry Ln.
This session will include a collaboration with dairy sciences professor and AgCenter Dairy Store manager Charles Boeneke. Participants will have an opportunity to learn how to make homemade ice cream cake.
"Dr. Boeneke will talk about the science behind ice cream and how to properly control the temperature of the ice cream when making an ice cream cake." said Ashley Gutierrez, associate director of FOODii.
Gutierrez will work with AgCenter consumer food safety specialist Shannon Coleman and Evelyn Watts, seafood state specialist. Each will bring their unique food science experiences to the session.

Space is limited, and registration is required. The cost to attend is $60, and each participant will leave with their ice cream cake. Registration is available for kids ages 10 and older, but each child must be accompanied by an adult. The cost for accompanying adult is $10.

Watts said they plan to offer the series every other month. Future topics include charcuterie boards and toaster pastries.
