Seafood lab highlights underutilzed fish species

(Video 10/31/24) Louisiana is known for having some of the nation’s best seafood. Efforts are underway to expand items on the menu, including reintroducing some fish species that were once staples but have fallen out of favor. LSU AgCenter correspondent Craig Gautreaux has this report from the Iberia Research Station.
