Current trends are driving businesses to cross over from retail to manufacturing, blurring the lines between industries. Spanning across both areas enables limitless potential and growth of food businesses, but also makes it difficult to establish food safety programs to meet the regulatory requirements.
This is a nine-module eLearning curriculum which aims to provide a road-map of regulation compliance for food businesses with blended retailing and manufacturing functions, particularly to assist retailers who conduct specialized processing.
The modules are self-guided and independent to each other.
Depending on the food products the retailers are engaged in, they will have to complete all basic modules (1-4), then they will choose the specialized processing they are engaged in and complete the corresponding modules. All participants will be required to complete the curriculum feedback survey in module ten (10).
Each module is structured the same way, pre-assessment, introduction, Content (PowerPoint, Animation and/or Videos), models, and post-assessment.
The participant will receive a certificate of completion listing the modules completed. To receive a certificate, they will be required to review content and complete all activities within each module. After reviewing each module, they will be prompted to complete a post-assessment, they will need to answer correctly 80% of the questions in this assessment to pass each module.

The eLearning curriculum for retailers is housed in the LSU AgCenter Moodle. You need an AgCenter or Google account, and an enrollment key. For Google users, make sure the name in the Google account matches the name used in the registration form.
