Louisiana Healthcare Connections and the LSU AgCenter have
partnered to produce the video series ‘Build a Healthy Meal.’ In these videos,
we show you how to make easy, tasty and healthful recipes for the whole family
using low-cost ingredients.
In this video, LSU AgCenter Area Nutrition Agent and registered dietitian, Bertina Mcghee, demonstrates how to make a delicious and nutritious meal with produce purchased from the local farmers’ market. Fruits and vegetables from farmers’ markets will be in peak season, which means they will be the freshest and tastiest available. They will be at the best price, too, which can help you stretch your food dollars. This quick and tasty recipe is made in one skillet so you can have dinner on the table in just minutes, and it makes clean-up easy!
2 tablespoons of olive oil
1 pound of boneless, skinless chicken breast cut into chunks
1 teaspoon of salt
1 teaspoon of black pepper
2 cloves of garlic minced OR 2 to 3 teaspoons of dried garlic powder OR canned minced garlic
1 pound of fresh green beans
1 pint of cherry tomatoes, cut in half
¼ cup of chicken broth
1 fresh lemon (juice and zest)
½ teaspoon of dried thyme OR 1 sprig of fresh thyme leaves
1 tablespoon of balsamic vinegar
Grated parmesan cheese, optional
Serve dish with brown rice and a side of fresh berries to round out your healthy meal!
