Chef/Kitchen Director
DESCRIPTION: The Grant Walker 4-H Educational Center seeks a Chef/Kitchen Director for our summer camp located in Pollock, LA. Grant Walker serves as a 4-H summer camp to children 9-12 years of age, and currently in the 4th-6th grade.
Qualifications:
- Minimum 21 years of age
- Current ServSafe certification preferred
- Must complete the employee background screening process and be approved by LSU AgCenter Human Resource Management
- Experience in institutional or large food service setting
- Knowledge and experience in food service: ordering, inventory, budgeting, food preparation, line serving, cleaning, and institutional/commercial kitchen equipment
- Knowledge of federal, state, and local laws concerning food service operations
- Willingness to follow directions from Camp Director and kitchen advisors
- Strong ability to work as a team member
- Strong organizational skills
- Ability to ask for assistance when needed or desired
- Ability to interact with all age levels
- Capability to relate to youth and young adults in a positive manner
RESPONSIBILITIES:
- Assist in training of all kitchen staff before camp
- Develop kitchen assignments for kitchen staff based on their area(s) of expertise
- Maintain a sanitary and safe environment for food handling, storage, and serving
- Conduct weekly inspections of all kitchen equipment and facilities to ensure proper utilization, care, and maintenance
- Report equipment/facility issues promptly to Camp Director
- Plan appropriate quantities of nutritious and healthy meals
- Work within budget provided to create food orders and any menu adjustments that are needed
- Confirm, accept, unload, and inventory deliveries of food, supplies, and equipment
- Communicate correct procedures and practices to kitchen staff
- Must follow Grant Walker 4-H Educational Center’s rules, policies, and traditions
- Adhere to mealtime schedules, clean-up, and prep times
- Be a positive role model to campers and staff in your attitude and behavior
Job Duties:
- Coordinate and prepare meals for approximately 550 campers and staff
- Clean, organize, reset kitchen, service and dining area following each meal
- Supervise up to 12 kitchen staff
- Ensure high-quality meal experiences
- Other duties as assigned by Camp Director
Physical Aspects of the Job:
- Excellent communication skills
- Work with large groups (of varying ages, skills, and experience levels) to provide necessary instruction and information
- Effective visual and auditory skills. Be able to identify and respond to environmental and other hazards
- Enforce safety policies and procedures
- Be prepared to use all kitchen equipment on site correctly and in a safe manner
- Duties will include/require:
- Prolonged standing, bending, stooping and walking
- Hand-eye coordination and manual dexterity to manipulate equipment
- Lifting up to 50 pounds
- Extended exposure to heat
- Irregular work hours, on occasion

- Camp Director
- Sous Chef/Kitchen Assistant
- Line Cooks/Kitchen Staff
Supervises:
HOURS/SALARY/HOUSING: Two shifts are available (morning and evening). Salary will commensurate with experience. Housing will also be provided onsite throughout the season.
DATES AVAILABLE: May 21-August 1, 2018. Work hours are Monday through Friday each week for the ten-week period. Chef/Kitchen Director is required to be at camp before the camp season begins to order food, set-up kitchen, and complete the hiring of kitchen staff.
