July 25 – 27, 2012 was a time of food, fun, and facts about nutrition for Rapides parish youth. Twelve youth age 9 – 12 years of age attended Kid Chef Nutrition Camp
at the LSU AgCenter. Day one started with kitchen and food safety sessions – the Kid Chefs visited the Germ Cave and learned how proper hand washing can prevent the spread of foodborne illness when preparing food. They made Sandwich Sushi, Monkey Pizza, and Peanut Butter & Jelly Muffins.
The kids learned how to make roux flour – virtually fat free for their heart healthy gumbo on Tuesday. They learned about whole grains and cooked brown rice to go with the gumbo. Youth learned how to cut up a whole chicken into eight pieces. They used boneless, skinless chicken breasts for their gumbo.
On day three the kids explored table manners and how to set the table both formally and informally. The menu consisted of Vegetable Beef Soup in the slow cooker, and Taco Chicken wraps.
