| Broccoli has more vitamin C than an orange and as much calicum as a glass of millk. |
2 bunches broccoli
½ cup light or regular mayonnaise
¼ cup sugar
1 Tablespoon cider vinegar
1 small red onion, chopped
½ cup sweetened dried cranberries
½ cup toasted chopped pecans or ½ cup roasted sunflower seeds
Separate broccoli florettes into small pieces and set aside.
Stir together mayonnaise, sugar and vinegar in a large bowl; add broccoli, onion, dried cranberries and nuts, tossing gently to coat. Cover and chill 8 hours. Makes 6 to 8 servings.
