Pumpkin Bread

This pumpkin bread tastes great and is good for you.

Featured Jambalaya Recipe for October 2005.

  • 2 cups sugar
  • ½ cup oil
  • 3 eggs
  • 1 (16-oz) can canned pumpkin
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 teaspoon soda
  • 1 teaspoon cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 cup chopped pecans

In a large bowl blend sugar, oil and eggs together. Stir in pumpkin. Sift dry ingredients together and add to pumpkin mixture. Stir in pecans. Pour into two greased loaf pans and bake in a preheated 350-degree oven for 1 hour or until done.

*Note – 1 cup mini chocolate chips can be added to the batter.
