4-H Food Festival

The Rapides Parish 4-H Food Festival will be held on Thursday, Feb. 24, 2011 at the Alexandria Mall. Registration will begin at 5:00 p.m. The registration table is located in the Center Court outside of Burlington Coat Factory.

1. All dishes must be prepared by the 4-H member AT HOME. Because food safety is a concern, all dishes should be prepared/cooked and then chilled in the refrigerator. The dish must be transported to the contest ON ICE IN AN ICE CHEST. DISHES NOT CHILLED AND TRANSPORTED IN THIS MANNER WILL BE DISQUALIFIED. Contestants must check in at the registration table prior to setting up their dish. Registration location – (Center Court) outside Burlington Coat Factory.
2. Items needed for the contest: One (1) copy of the recipe hand written or typed on an 8 ½ -by 11 inch sheet of paper ON THE BACK, PLACE YOUR NAME, ADDRESS, AGE AND SCHOOL. Fully cooked dish chilled in the refrigerator; transported to contest on ice in ice chest.
3. Take a short written test on general nutrition and food safety.
4. Awards will be presented to participants at the end of the contest. District contest contestants will be determined at a later date.
5. Contestants can enter only one dish per commodity cookery division.

Each dish in the egg cookery division must use at least four eggs in the recipe. It may be a appetizer, a main dish, appetizer/salad, or dessert.

Poultry dishes must use at least two pounds bone-in or one pound de-boned chicken. You may also use 12 ounces processed poultry products.

Seafood cookery dishes may have one of the following seafood – crab, shrimp, Louisiana catfish, crawfish and other. The dish must have at least one cup of seafood. NO IMITATION OR CANNED SEAFOOD is allowed

In the Commodity Ambassador Talk Contest 4-H'ers must design a standard poster (22X28) related to one of (3) categories – egg, poultry, and seafood. Contestants will have to give an 3 minutes talk in the selected commodity category.
