The Audubon Sugar Institute is the successor organization to the old Audubon Sugar School, which had its beginning with that of the Louisiana Agricultural Experiment Station in 1887. The Institute is a full-service unit capable of both laboratory and pilot operations and is designed for research and technical service to Louisiana’s agricultural industries, primarily the cane sugar processing industry. The facilities of the Institute are ideal for pilot studies.

The faculty and staff of ASI operate the LSU AgCenter facility in St. Gabriel, Louisiana, which contains six laboratories, a specialized library, a pilot facility and machine shop. The faculty maintains academic appointments in departments on the LSU campus in Baton Rouge and provides mentoring and training to graduate students from these departments at the St. Gabriel facility.

Audubon Sugar Institute offers a separate education program of internationally recognized, non-degree short courses in various aspects of sugar technology and engineering.

The research program at the Institute concentrates on new technology development that can be adopted by the cane sugar processing industry, ranging from simple technological developments to major initiatives such as directly producing refined sugar and utilizing lignocellulosic wastes. Most projects come to fruition in a short (5-year) time frame.
