EatSmart Nutrition Curriculum

EatSmart is a Web-based nutrition curriculum developed by a team of nutrition specialists from the LSU AgCenter. The curriculum is organized into six sections: Basic Nutrition, The Nutrients, Stretching Your Food Dollars, Nutrition & Chronic Disease, Nutrition & the Life Cycle and Food Safety. Each section has several lessons covering different topics. Each lesson includes pre and post-tests.

LSU AgCenter has developed a Nutrition Certification Program for nutrition educators (paraprofessionals). All AgCenter nutrition educators are required to become certified within two years from the employment date. EatSmart is used as the study curriculum for the certification program. Several other states besides Louisiana have a paraprofessional certification program and use EatSmart as their study curriculum.
