Areas of Specialization/Research
Research Interests:
- Inhibition of angiogenesis using functional foods with emphasis on macular degeneration (and related precursors) and certain types of cancers such as breast, leukemic, and pancreatic cancers.
- Functional foods of interest include: marine collagen, lutein, phosphatidylglycerol, marine ceramides, animal and plant proteins, plant phenolics, phenetylisothiocyanate, fenugreek and blackseed.
Future Research:
- Development of food-grade nanoparticles for delivery of anti-angiogenic functional foods.
- Functional food formulations based on reduced expression of inflammatory genes.
