EatSmart Recipes - Red Beans and Rice

INGREDIENTS

DIRECTIONS

1 cup red beans, washed and drained

3 cups water

Ham bone OR 1 pound turkey sausage

1 clove garlic, chopped

1 rib celery, chopped

2 tablespoons parsley, chopped

1 large bay leaf, crushed

1 medium onion, chopped

1. Place beans in large kettle of water. Turn heat on, bring to boil, reduce heat to simmering. 

2. Cook for 1 ½ to 2 hours, stirring frequently to prevent burning.

3. Add onion, garlic, celery, bay leaf and salt. Add ham bone or sausage.

4. Continue to cook over low heat for ½ to 1 hour.

5. If beans become too dry, add heated water.

6. Serve with rice

Makes 4 servings.
