Areas of Specialization/Research Dr Finley is interested in foods which enhance health, particularly
related to obesity and reducing the side effects of obesity. Specific
interests are in the development of culinary quality in low calorie
foods and ingredients. Additionally, he has an active program on
reducing chronic inflammation with dietary intervention. Inflammation
is the basis of any of the side effects of obesity and diabetes. Food
ingredients and altered diet can reduce or delay these adverse side
effects.
Future Research Vision:
- Establish healthy, great tasting products that are culturally acceptable
- Develop combinations of ingredients that reduce chronic inflammation in cardiovascular tissue
- Establish technologies to improve absorption and bioavailability of health promoting compounds
- Develop new and innovative low calorie ingredients and bulking agents
